It’s about that time of year when college campuses become deserted, and sunny beaches are completely overtaken by students celebrating spring break. But if you haven’t left for your tropical destination yet you still have time to do some last minute beach bod prepping. These little miracle snacks can help you do just that! They provide a healthy energy boost, call for no oven use, and are perfect for on-the-go snack sessions. Also, if you don’t like one or two of the ingredients just substitute for something you do like. You may have to play around with the quantities of what you add in to get the bites to the right consistency.
To make about 20 bites you will need:

1 cup oatmeal

1/2 cup peanut butter

1/3 cup honey

1 cup coconut flakes

1/2 cup ground flaxseed

1/2 cup mini chocolate chips

1 teaspoon vanilla
Mix all the ingredients in a medium-sized bowl until everything has been thoroughly incorporated into the mixture. Let the mixture chill in the refrigerator for half an hour. Once it is completely chilled, roll approximately tablespoon sized portions into balls and enjoy! Make sure to store in an airtight container and keep refrigerated for up to one week.

i love this recipe. I took these to work and my co-workers loved them, made them at my boyfriends house and his family loved them. now i’m making them again as a post run treat. i love that they are so simple and delicious. this time i am trying almond butter because i didn’t have enough peanut butter. thanks for the post.
