It seems like every magazine I peruse this summer has a delicious, healthy recipe, and I’m happy to say that I’ve tried quite a few so far, and am looking forward to trying many more. My two favorite recipes from the summer have included my new favorite food: avocado.

 

The first recipe is super simple. Skin an orange, dice an avocado, toss it together with olive oil and some salt and pepper to taste. I added a few scallions the second time I made it, which just gave it a little extra flavor. This has been repeated several times in the past few weeks because it’s simple, healthy and tasty!

 

The second recipe, from Rachael Ray, takes a little more prep, but it’s still relatively easy. Grilled corn, black beans, radishes, scallions, cilantro, and avocado mixed together with a dressing of extra virgin olive oil, lime juice, chili powder and salt, then topped with queso fresco. These two avocado salads are perfect for a hot summer dinner out on the patio.
