Watermelon-Keg

Watermelon is the Flavor of the Season!

With summer rapidly approaching and temperatures rising, we can all use a few refreshments to make the heat more bearable! Whether you’re relaxing by the pool or having a get-together with friends, any of these watermelon inspired drinks will do just the trick. So grab your besties and get to mixing!

Watermelon & Tequila Popsicles

First, we have these fabulous Tequila & Watermelon popsicles. You’ll need:

  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1 cup watermelon juice (from about 1/2 a small watermelon)
  • 1 lime, zested and juiced
  • 2 tablespoons tequila
  • Popsicle Molds
  • Popsicle Sticks

Grab the girls and follow these simple steps:

  1. Combine water and sugar in a microwave safe container or glass measuring cup. Heat on high for 30 seconds-1 minute, and stir until sugar is dissolved and the mixture is clear. Set aside to cool.
  2. Roughly chop the watermelon. You’ll need approximately 3 cups of chopped melon to produce a cup of juice. Crush the melon and strain through a fine mesh sieve.
  3. Combine watermelon juice, sugar syrup, lime juice (and zest), and tequila in a small bowl or pitcher. Pour into popsicle molds, insert sticks & freeze until solid!

Watermelon & Strawberry Lemonade

your favorite alcohol of choice!

You’ll need:

  • 8 cups of cubed and seeded watermelon
  • 1 cup of strawberries, halved
  • 1/2 cup fresh lemon juice
  • 1 cup granulated sugar
  • 2 cups water (or you could substitute sprite/7up)

The directions are pretty much self-explanatory, but make sure you have that blender handy! Combine all the ingredients and blend until smooth (depending on the size of your blender, you may have to do 2 batches). And a trick, if you cube the watermelon and freeze it ahead of time, it gives the lemonade a slushy feel!

Pink Lemonade Cupcake

Pink Lemonade Cupcakes

Pink, lemonade, and cupcakes. This is a combination I just can’t pass up. With spring air teasing us but weather still cool enough to use an oven, these cupcakes are the perfect sweet treat to get you through until summer break!

Cupcakes:

1 cup butter, at room temperature
2 cups sugar
4 eggs
1 teaspoon vanilla
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Grated zest and juice of a lemon
1 cup milk, divided

Preheat the oven to 375 degrees and line 24 muffin tins. In a large bowl, mix the butter, sugar, and lemon zest until light and fluffy. For best results use an electric mixer. Then beat in the eggs one at a time and add the vanilla.

In a second smaller bowl, combine the flour, baking powder, and salt. Add this to the butter mixture one third at a time, alternating with half the milk and half the lemon juice after each of the first two additions of flour. Beat until only just combined.

Fill the tins about half way and bake for twenty minutes, until springy to the touch. You can tip the cupcakes out of their tins to allow them to cool and be sure to let the cupcakes cool completely before frosting.

Pink Raspberry Frosting:

1 cup fresh raspberries (or thawed from frozen)
1 cup butter, at room temperature
3 cups confectioners’ sugar

Use a blender or food processor to puree the raspberries until smooth. In a bowl, beat the butter and half the sugar until smooth. Add the raspberry puree, then more sugar until you have a fluffy, spreadable consistency. If you think the frosting needs it, add a splash of water, but only a tablespoon or two. Spread on the cupcakes once they are completely cool and enjoy this delicious little prelude to summer!
